Ingredients:

  • 1 1/2 cups flour
  • 1 1/2 cups sugar
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • 2 eggs
  • 3/4 cup warm water
  • 3/4 cup buttermilk
  • 3 tbsp canola oil

Directions:

  1. Preheat oven to 350Ëš F. Line muffin tins with paper liners, set aside.
  2. Sift together first 5 ingredients into mixer bowl. Add remaining ingredients and mix until smooth, about three minutes. Scrape down sides and bottom of bowl.
  3. Divide batter into muffin cups, fill each about 2/3 full. Bake until tops spring back when touched, about 20 min, transfer to wire rack and let cool.
