Chocolate Chip Cheesecake Ball

Ingredients:

  • 1 (8-oz) package softened cream cheese
  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup confectioner's sugar
  • 2 tbsp brown sugar
  • 3/4 cup finely chopped pecans
  • graham crackers (regular or sticks), or vanilla wafers

Directions:

  1. In a large mixing bowl, beat the cream cheese, butter, and vanilla until fluffy.
  2. Gradually add the sugars and beat just until combined.
  3. Stir in the chocolate chips.
  4. Cover and refrigerate for approximately 2 hours.
  5. Remove from refrigerator and place mixture onto large piece of plastic wrap.
  6. Form into a ball shape and refrigerate again for about 1 hour.
  7. Just before serving, remove from refrigerator and unwrap.
  8. Roll cheese ball into finely chopped pecans until it is thoroughly covered.
  9. Place onto small serving plate with graham cracker sticks or vanilla wafers.
