Chilled Strawberry and Mint Soup (Robert Irvine)

Ingredients:

  • 1 pint vanilla ice-cream (frozen yoghurt can be substituted)
  • 4 tsp honey
  • 1/2 cup sour cream
  • 1/2 cup heavy cream (vanilla yoghurt can be substituted)
  • 4 tsp strawberry pucker, optional (similar to schnapps)

Directions:

  1. Combine all the ingredients, except the mint, in a blender and mix well
  2. Refrigerate for at least 1 hour to allow the flavors to blend. Before serving, stir in the chopped mint. Pour into soup bowls and serve. This is a great chilled soup or summer drink. Enjoy.
