Ingredients:

  • makes about 4
  • 2 cups of already cooked white rice
  • 2 eggs
  • 1 cup of milk
  • i would like to try this with red peppers and some parsley with swiss cheese.

Directions:

  1. Preheat oven at 350°F. Beat the eggs in a large bowl. Stir in the cooked rice, 1 cup of the cheese, milk and chillies. Pour the mixture into a greased oven bowl (preferably a glass casserole). Lay the remaining cheese on top of the mixture and cook in oven for about one hour.
