CHICKEN SOUP W/SPINACH

Directions:

  1. Heat oil in sauce pan over medhigh heat. Add diced chicken cook until browned,
  2. To 4 minutes. Transfer to plate.
  3. Add zucchini, shallot, garlic, Italian spices saute until tender 2 to 3 minutes.
  4. Add tomatoes, broth and Orzo. Bring to boil, reduce heat to simmer and cook 5 minutes until Orzo is tender.
  5. Turn off heat, Add chicken and spinach. Serve.
