Chicken Divan for Two

Ingredients:

Directions:

  1. Preheat oven to 450ºF or grill to medium-high.
  2. Center one chicken breast half on each sheet of heavy duty foil.
  3. Combine rice, soup and water; spoon over chicken.
  4. Arrange broccoli and mushrooms on top of chicken and rice mixture.
  5. Top with ice cubes.
  6. Bring up foil sides.
  7. Double fold top and ends to seal packet, leaving room for heat circulation inside.
  8. Repeat to make two packets.
  9. Bake 24 to 26 minutes on a cookie sheet in oven or grill 14 to 16 minutes in covered grill.
  10. Sprinkle with cheese before serving.
