Ingredients:

  • 1 large hen (fresh if possible)
  • salt and pepper
  • 2 cups milk

Directions:

  1. In a super large crock pot place hen with water about 1/4 up the inside of crock pot. The old hen will make her own juices. Let her cook on high.
  2. For 8 hours. I preferred reducing the heat and cooking while I sleep for 10 hours.
  3. Just before the final cooking process, begin making your dumplings. Use the flour and milk, stirring, until you are able to form a ball. Remove and place on a floured surface. Roll the ball until it is flat and thin. You will learn to judge the thickness that you like. Cut with a sharp knife into long strips about an inch wide, two inches long.
  4. Remove stock from crock pot and add to a large pan. Add additional water, bringing to a rapid boil.
  5. Drop your strips of dough one at a time to the boiling water. The uncook strip will drop to the bottom, cook, and return to the top quickly. Continue making the strips until you have used all of your 2 lb. bag of flour or until you believe you have enough dumplings for everyone.
  6. When you have finished this process you should have lots of dumplings and a nice reserve of stock that has thickened a little.
  7. Remove your chicken from the bones and add to the whole pot. Salt and pepper to your taste.
  8. Turn off the heat, allow this to sit for about 1 hour.
  9. This will feed a family of 6.
  10. Optional ingredients: butter, onion. Just remember that old hen will put off a lot of chicken fat, so use your judgement on any additional oils.
