Ingredients:

Directions:

  1. Preheat oven to 375 degrees.
  2. Spray a 9x13 inch baking dish with non-stick cooking spray.
  3. Add 1/2 taco seasoning mix packet to bag of shredded cheese and shake well.
  4. Cover bottom of baking dish with thin layer of enchilada sauce.
  5. Cover sauce with 6 corn tortillas.
  6. Sprinkle cheese over tortillas.
  7. Repeat layer of 6 tortillas, sauce and cheese.
  8. Repeat layers again.
  9. Cover baking dish with aluminum foil and place on middle rack in oven and bake covered for 35-45 minutes. Uncover last 5-10 minutes of baking time.
  10. Remove from oven and cool for 10 minutes before serving.
