Ingredients:

Directions:

  1. Cut 1 filet of Redfish, or talipia (trout gets mushy) into bite size pieces
  2. Put into a container with a lid or a zip-loc bag
  3. Pour squeezed lime juice over the fish
  4. Put in frig and marinate min. 4 hrs.
  5. Toss occasionally to coat all pieces
  6. While fish is in frig.
  7. Combine all ingred. in a large bowl
  8. Toss well with the olive oil
  9. And put in frig.
  10. When fish has been in frig correct amount of time
  11. Remove and rinse all lime juice off. (Very important)
  12. Rinse til water runs clear.
  13. Add fish to the mixture and toss again.
  14. Ready to serve with your fav. cracker or chip.
  15. Will keep several days but..
  16. Must keep excess liguid drained from mixture.
  17. If you don't it will be soggy.
  18. (You may add cracked pepper if you want)
