Ingredients:

Directions:

  1. Prep time does nor include cooking beans, I use canned rinsed and drained
  2. To make the salad: Steam or par-boil the cauliflower just until
  3. Tender, 5 to 7 minutes.
  4. Allow it to cool.
  5. In a serving bowl, combine the cauliflower, beans, scallions, and red and green peppers.
  6. To make the dressing: in a blender or food processor, process the
  7. Garlic, vinegar, oil, buttermilk and Parmesan until smooth, adding salt and pepper to taste.
  8. Toss the salad with the dressing, and serve immediately.
