Carrots Amaretto

Ingredients:

  • 1 lb carrot
  • 3 tbsp butter
  • 2 tbsp sugar
  • 1/4 cup amaretto
  • salt and pepper

Directions:

  1. Parboil sliced carrots (I usually use the baby carrots whole) until al dente, about 10 minutes.
  2. Drain and rinse under cold water to stop cooking. This can be done a couple of hours ahead of time.
  3. Heat butter over medium heat until melted. Add carrots, sugar and heat to caramelize sugar.
  4. Add Amaretto and cook to reduce sauce to a glaze.
  5. Season to taste with salt and pepper.
  6. Serve immediately.
