Ingredients:

Directions:

  1. Combine potatoes, carrots and water in shallow 2 quart microwave proof dish.
  2. Cover and microwave on high 14 minutes stirring halfway through then let stand.
  3. Heat oil in large skillet over medium high heat.
  4. Add onion, garlic, jalapeno and ginger.
  5. Cook stirring until onion is translucent about 5 minutes.
  6. Stir in curry powder then cook 30 seconds.
  7. Stir in vegetables with their liquid, chick peas, 3/4 cup water and salt then simmer 4 minutes.
