Ingredients:

  • 1 1/2 cups granola
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup honey
  • 1/4 cup canola oil
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger

Directions:

  1. Combine granola, flour, baking powder, salt and spices in a large bowl. Stir well to blend.
  2. Beat egg in a small bowl. Add milk, honey and oil. Mix well.
  3. Add liquid ingredient to blended dry ingredients. Stir until all ingredients are moistened. Stir in carrots.
  4. Fill paper-lined or greased muffin-pan cups 2/3 full.
  5. Bake at 400 degrees for 20 - 25 minutes.
  6. Brush melted butter over tops and sprinkle lightly with turbinado sugar or spread with cream cheese frosting or whipped cream cheese.
  7. Serve spilt with butter while still warm.
  8. Makes 1 dozen
