Ingredients:

  • 2 eggs
  • 3/4 cup buttermilk
  • 1/3 cup oil
  • 1/2 cup packed brown sugar
  • 1 1/4 cups 100% bran
  • 1/2 cup raisins
  • 1 tsp orange zest
  • 1 1/2 tsp cinnamon
  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp nutmeg

Directions:

  1. Whisk eggs, sugar, oil and buttermilk.
  2. Add carrots, cereal, raisins, orange rind.
  3. Let stand 5 minutes.
  4. Sift together dry ingredients.
  5. Add to buttermilk mixture.
  6. Stir until just blended.
  7. Bake 350* in greased 9x9 pan.
  8. 25-30 minutes or until cake tester comes out clean.
  9. Let cool n pan on rack.
  10. Cut into bars.
  11. These freeze quite well.
