Carrot And Orange Soup

Ingredients:

  • 2 lb 4oz carrots
  • 4 cm piece root ginger
  • 4 tbsp maple syrup
  • 2 tbsp cooking oil
  • 2 pints veg stock

Directions:

  1. Cut carrots into lengths the width and length of your little finger
  2. Cut root ginger into matchstick lengths.Cut onion into chunks
  3. Put into baking tray with the syrup and oil
  4. Bake at gas 7 for about 40 minutes
  5. Scrape into a saucepan including all the pan juices and add stock
  6. Liquidise,re-heat and serve
