Cardamom Ice Cream - La Cascade Restaurant, Kenmare, Ireland

Ingredients:

  • 2 cups milk
  • 1 3/4 tsp ground cardamom
  • 7 large egg yolks
  • 3/4 cup sugar

Directions:

  1. Combine milk, whipping cream and ground cardamom in heavy medium saucepan.
  2. Scrape in seeds from vanilla bean then add bean. Bring to a boil.
  3. Whisk egg yolks and sugar in lage bowl to blend. Gradually whisk in hot milk mixture.
  4. Return mixture to same saucepan. Stir over medium heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 10 minutes; do not boil.
  5. Strain into bowl. Chill custard until cold.
  6. Transfer custard to ice cream maker and process according to manufacturer's instructions. (Can be prepared 3 days ahead. Transfer to container and freeze.).
  7. Scoop ice cream into bowls and serve.
