Caramelized Onion Soup With Pear and Stilton

Ingredients:

Directions:

  1. Melt butter and Olive oil in large pot.
  2. Add diced onion and cook over medium heat until well browned and caramelized.
  3. Core, peel and dice pear.
  4. Add to onions, stirring until lightly browned.
  5. Add potatoes and chicken broth.
  6. Simmer, covered, until potatoes are tender.
  7. Puree with an immersion blender. (or regular blender).
  8. Add milk and 1 1/2 ounces of Stilton. Heat through.
  9. Serve garnished with remaining Stilton crumbled on top.
