Directions:

  1. For Crust:
  2. Grease a 13x9 in metal pan then line with foil leaving a 2 inch overhang on both ends. Grease foil.
  3. Whisk together flour, baking powder and salt in a small bowl.
  4. Beat together butter and sugar in a large bowl with electric mixer on medium speed until pale and fluffy.
  5. Beat in egg and vanilla.
  6. Reduce speed to low and add flour mixture until just combined.
  7. Press mixture evenly onto bottom of pan and chill 20 min.
  8. Position rack in middle of oven and preheat to 375.
  9. Bake crust until golden about 30 min. Cool in pan on rack 20 min.
  10. For Topping:
  11. Cook sugar in 2 1/1 to 3 qt heavy saucepan over moderate heat undisturbed until it begins to melt. Continue cooking stirring occasionally with a fork until melted and deep caramel brown.
  12. Tilt pan and carefully pour in heavy cream(caramel will harden and steam).
  13. Cook over moderately low heat stirring until caramel is dissolved.
  14. Remove from heat and stir in vanilla, butter, salt and pecans.
  15. Immediately spread over cooled crust and bake until bubbling about 20 min.
  16. Cool completely in pan on wire rack about 2 hrs.
  17. Run heavy knife under hot water than wipe dry and cut into squares or triangles.
