Ingredients:

  • 2/3 cup packed brown sugar
  • 2 large egg yolks
  • 1/2 tsp vanilla
  • 2 1/2 cups flour
  • 1/3 cup finely chopped pecans
  • 1/4 tsp salt
  • 2 tbsp butter , plus
  • 1 1/2 tsp butter ( no substitutes)
  • 1 1/2 cups confectioners' sugar
  • 1/2 tsp vanilla
  • 2 -3 tbsp whipping cream

Directions:

  1. Cookie: Cream butter and sugar.
  2. Add egg yolks and vanilla.
  3. Stir in flour and salt, then pecans.
  4. After mixing ingredients shape into two 10- inch rolls and refrigerate for 2 hours
  5. Unwrap and cut into 1/4-inch slices.
  6. Bake at 350° for 11-13 minutes or until golden brown.
  7. Cool, then frost one side of a cookie and sandwich it with another.
  8. Filling: Cream butter and sugar.
  9. Add vanilla, then cream to reach nice spreading consistency.
  10. Yield is approximate.
