Caramel Apple Bars

Ingredients:

  • 1/2 cup. butter
  • 1/4 cup solid shortening
  • 1 cup. brown sugar
  • 1 3/4 cup. flour
  • 1 cup. oats
  • 1/2 tsp. baking soda
  • 1 1/2 cup chopped peanuts
  • filling
  • 4 1/2 cup. coarsely chopped apples, peeled if desired
  • 3 tsp. flour
  • 1 package. caramels unwrapped
  • 2 tsp. butter

Directions:

  1. In bowl cream butter, shortening and brown sugar until fluffy.
  2. Mix the flour, oats, baking soda and peanuts.
  3. Set aside 2 cups.
  4. Press remaining crust in a 9 x 13 pan, ungreased.
  5. Toss apple with flour and spoon over crust.
  6. In a saucepan, melt caramels and butter.
  7. Drizzle caramel mixture over apples. Top with 2 cups of reserved crust mixture.
  8. Bake at 400 for 25-30 minutes, until lightly browned.
  9. Cool before cutting.
  10. Yummy with a scoop of cinnamon ice cream!
