Calamari With Asian Spinach

Ingredients:

Directions:

  1. To make the Spinach: In a large skillet, heat olive oil.
  2. Add onion and garlic; saute 4 minutes.
  3. Add tomatoes, soy sauce, ginger, and hot sauce; simmer 5 minutes.
  4. Add spinach; bring to a boil.
  5. Remove from heat and keep warm.
  6. In a dish or resealable plastic bag, place calamari, lemon juice, salt, and pepper.
  7. Toss to coat calamari.
  8. Marinate 10 minutes.
  9. Thread six 12-inch skewers with calamari.
  10. Brush with sesame oil.
  11. Grill 4 minutes, turning once halfway through grilling time.
  12. Serve skewers on warm Asian spinach.
