Cajun Tasso Ham With Seared Scallops

Ingredients:

  • 5 oz scallops
  • 1 oz tasso (prusitto, pancetta or ham)
  • 1 tbsp olive oil

Directions:

  1. Saute' scallops in oil about 3 minutes; add clam jucie, ham and cream.
  2. Cook over low/medium heat reducing liquid until suace thickens.
  3. Serve over rice or on it's own.
