Buttermilk Cinnamon Bread

Ingredients:

  • 4 cups flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup vegetable oil
  • 2 1/2 cups sugar, divided
  • 2 cups buttermilk
  • 2 eggs
  • 1 tbsp. cinnamon

Directions:

  1. Preheat oven to 350
  2. In large mixing bowl, combine flour, baking soda and salt
  3. In small bowl, combine oil and 1 1/2 cups sugar
  4. Add buttermilk and eggs and mix well
  5. Stir into dry ingredients until just moistened
  6. Fill two greased 8 x 4 inch loaf pans about a third full
  7. Combine cinnamon and 1 cup sugar
  8. Sprinkle half over batter
  9. Top with remaining batter and cinnamon sugar
  10. Swirl batter with a knife
  11. Sprinkle with nuts
  12. Bake 45-55 minutes or until a toothpick inserted near the center comes out clean
