Ingredients:

  • 3 cups dried pea beans (other dry white beans can be subsituted)
  • 1/2 lb salt pork
  • 1/3 cup molasses
  • 2 tsp salt

Directions:

  1. Soak the beans overnight in water.
  2. In the morning drain beans well and pick through discarding bad beans.
  3. Put in large pot and cover beans with water and boil beans until the skins split when you blow on them (30- 60 minutes after water boils).
  4. Drain.
  5. Divide salt pork into two pieces.
  6. Slash salt pork pieces deeply several times and place in the bottom of a large bean pot or casserole.
  7. Pour in the drained beans.
  8. Mix together remaining ingredients (molasses, salt and mustard).
  9. Add mixture to beans with enough hot water to cover.
  10. Cover and bake at 300-degrees F for 6-8 hours, checking often and adding water as needed.
