Ingredients:

  • 3/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 2/3 cup canola oil
  • 1/2 cup boiling water
  • 2 cups sugar
  • 2 large eggs
  • 1 1/3 cups flour
  • 1/4 tsp salt
  • 1/4 cup butter
  • 1/4 cup skim milk

Directions:

  1. Stir cocoa powder and baking soda together in a mixing bowl.
  2. Blend in 1/3 cup canola oil.
  3. Add boiling water and stir until mixture thickens.
  4. Stir in sugar, eggs, and remaining canola oil until smooth.
  5. Add flour, 1 teaspoon vanilla, and salt and blend completely.
  6. Stir in peanut butter chips.
  7. Pour into a greased and floured 13 x 9 x 2-inch baking pan.
  8. Bake at 350° for 30 minutes (don't overbake!).
  9. Cool.
  10. For frosting, melt butter, milk, and chocolate chips together in a saucepan, then add vanilla.
  11. Stir in powdered sugar until smooth.
  12. Spread onto brownies.
