Blueberry-Oatmeal Breakfast Cake

Ingredients:

  • 1 1/3 cups flour
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup cooking oil

Directions:

  1. Heat oven to 400 degrees.
  2. Grease an 8 inch round baking pan; set aside.
  3. Combine dry ingredients in large bowl.
  4. Stir egg, milk and oil in small bowl.
  5. Add all at once to dry mixture.
  6. Stir just until moistened (batter should be lumpy!).
  7. Fold in blueberries.
  8. Spoon into prepared pan.
  9. Bake 25 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in pan 5-10 minutes.
