Cinnamon Streusel Coffee Cake

Ingredients:

  • 2 1/4 cups all-purpose flour , sifted
  • 1 tsp salt
  • 2 1/2 tsp baking powder
  • 1 egg
  • 1 1/2 cups milk
  • 1/3 cup oil ( veggie or e.v.o.o. ,whatever you have on hand)
  • 2 tbsp butter or 2 tbsp margarine
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 375 degrees Fahrenheit
  2. Mix and sift together 2 cups of flour, salt,1/2 cup of sugar and baking powder.
  3. Make a well and add the egg,milk and oil.
  4. Stir only enough to dampen the flour (batter should appear lumpy).
  5. Turn into one greased 10 pie pan or two greased 8 pie pans.
  6. Mix 1/4 cup of flour and 1/2 cup sugar in a bowl.
  7. Cut in 2 tbsp of butter or margarine with two knives until it is the consistency of cornmeal.
  8. Sprinkle this mixture over cake(s).
  9. Bake in the preheated oven for 35 minutes or until brown.
