Ingredients:

  • 2 cups flour
  • 1/2 cup sugar
  • 1/2 tsp salt
  • x lemon , rind of
  • 1 egg
  • 1 cup milk
  • 1/2 cup melted butter
  • 1/4 cup white sugar

Directions:

  1. Mix flour, sugar, Baking powder, salt and lemon rind into a large bowl.
  2. Beat egg in a med sized bowl, add milk and butter.
  3. Add egg mixture to dry ingredients.
  4. Stir until just mixed.
  5. Batter will be lumpy.
  6. Stir in blueberries.
  7. Fill pans and bake at 425 for 15 minutes.
  8. Take slightly cooled muffins and dunk tops into butter and then the sugar.
