Blueberry Lemon Soaked Oatmeal

Ingredients:

Directions:

  1. To soak oatmeal, put oats and 4 tbs lemon juice in a 1 quart glass mason jar, fill with water, stir, and soak 12-24 hours.
  2. Rinse oats, add to 2 quart saucepan. Add milk and heat til boiling at medium high heat, stirring occasionally. Reduce heat and simmer until oatmeal reaches desired consistency, about 5-10 minutes.
  3. While oatmeal thickens, thaw blueberries in microwave, on timed defrost setting for 5 minutes.
  4. Add blueberries, jam, cinnamon, brown sugar, 1 tbs lemon juice. Stir and enjoy! Store leftovers in the refrigerator and reheat the next morning for an even faster and easier breakfast!
