Blue Cheese Puffs

Ingredients:

  • 1/4 cup butter
  • 3/4 cup water
  • 3 large eggs
  • 1 (4 oz) container crumbled blue cheese

Directions:

  1. Bring butter and water to a boil in a saucepan.
  2. Take pan from heat; add in flour and pepper, beating with a rubber spatula or wooden spoon until mixture leaves the sides of the pan and forms a smooth ball.
  3. Add in eggs, one at a time, beating well after each addition.
  4. Stir in cheese; let mixture stand for 15 minutes.
  5. Drop dough by rounded tablespoonfuls 2 inches apart onto buttered baking sheets.
  6. Bake in a 400° oven for 30 minutes or until golden.
  7. Serve warm or at room temperature.
