Blackthorne's Faux Fried Chicken

Ingredients:

  • 1 lb chicken breast (four 4 oz. pieces)
  • 1/2 cup potato flakes
  • 1/2 cup. flour
  • 1/3 cup. soy milk
  • 2 tsp. dry mustard
  • 2 tsp. paprika
  • 1 tsp. cayenne (optional)
  • 2 tsp. salt
  • 1 tsp. ground sage
  • 2 tsp. black pepper
  • 1 cooking spray

Directions:

  1. Spray cooking sheet with cooking spray. Preheat oven to 425.
  2. In cold water, rinse the chicken parts and dry with paper towel.
  3. In one mixing bowl, add the flour, half the salt (1 tsp) amd half the pepper (1 tsp).
  4. In another bowl, mix the soymilk with the remaining salt and pepper (1 tsp each) and add the sage, paprika, mustard and cayenne.
  5. Take piece of chicken and dredge with flour. Dip in milk mixture. Dip back in flour. Dip in milk mixture again. Put into bag of potato flakes and roll around until piece is thoroughly coated with crumbs. Lay on baking sheet.
  6. Repeat with the other pieces.
  7. Put in oven for 15-20 minutes.
  8. After 15-20 minutes , turn the oven down to 375 and continue to bake until cooked and crispy and the juices run clear - about 25 - 30 minutes.
