Ingredients:

Directions:

  1. Load grill with charcoal to make very hot fire.
  2. Set cast iron skillet on grill.
  3. Let cast-iron skillet get very hot before adding ingredients.
  4. Combine all dry ingredients in a dish.
  5. Dip fish into melted butter and coat well.
  6. Cover fillets with seasoning and press into fillet with palm of hand.
  7. Place into hot skillet and pour 1 teaspoon butter on top of.
  8. Each.
  9. Cook, (uncovered) about 2 minutes until charred.
  10. Turn and cook until done.
  11. Serve hot with melted butter.
  12. Caution: cook outdoors due to smoke.
