Black Bean Potage-potaje De Frijoles Negros

Ingredients:

  • 1/2 medium onion
  • 1/2 medium green pepper
  • 3 cloves garlic
  • 3 tbsp olive oil
  • 1/2 tsp oregano
  • 1/4 tsp ground pepper
  • 1 tsp salt
  • 4 tsp sugar

Directions:

  1. 1. Soak beans in a large (covered) soup pot, with enough water to cover the beans, for at least an hour. Add one bay leaf and a few drops of olive oil to the water.
  2. 2. Cook the beans over medium heat for 90 minutes, checking frequently to see that there is enough water in the pot. The water should always cover the beans.
  3. 3. Now to make the sofrito, you can either chop, use the blender or food procesor for the onion green pepper and garlic
  4. 3.To prepare the sofrito combine the onion, green pepper, garlic, oregano, ground pepper and olive oil in a small frying pan with the liquid they released. Cook over medium-high heat for six to eight minutes, stirring frequently.
  5. 4. Once the beans are tender, add the sofrito to the black beans, reducing the heat on the beans to low. Mix the sofrito well with the beans, pressing some of the beans with a slotted spoon so that the flavors will soak in. Add the salt and sugar to the beans and simmer for half an hour.
  6. Remove bay leaf and serve.
  7. The cooking time varies, depending on the beans
