Ingredients:

Directions:

  1. Slice Squash and onions.
  2. Put them in a large pan with enough water to cover the bottom, plus a few extra seconds.
  3. Bring to boil, then let the water from the vegetables cook out. Takes about 20 minutes.
  4. Add salt and pepper.
  5. When veggies are nice and soft drain out the excess fluids. Then smush the veggies. Don't make them mush, but smush nicely.
  6. Mix together, in a separate bowl, the egg and cheese. Then add the hot veggies, allowing the cheese to melt and hold it all together.
  7. Spray a casserole dish with PAM.
  8. Add the mixture to dish, sprinkle with more ground pepper, and place in preheated 350 oven for about 30 minutes. Or until top is nicely browned and slightly bubbly.
