Bengal Fruit Loaf

Ingredients:

  • 3 cups sultanas
  • 2 cups sugar
  • 2 cups water
  • 125 g butter
  • 1 3/4 cups plain flour
  • 1 tsp ground cloves
  • 1/2-1 tsp curry powder

Directions:

  1. Place sultanas, sugar, water and butter in a saucepan.
  2. Bring to the boil.
  3. Simmer 5 minutes.
  4. Cool totally.
  5. Sift remaining ingredients into a bowl.
  6. Make a well in the centre.
  7. Pour in fruit mixture.
  8. Mix well and spoon into 2 greased loaf tins 10 x 20 cms.
  9. Bake moderate oven 180 C for i hour or till cooked when tested.
  10. Cool 5 minutes in tin then turn onto wire rack.
  11. Whentotally cool, serve sliced and buttered.
