Ingredients:

  • 2 litres chicken stock
  • 300 ml (10fl oz) german beer
  • 250g (8 oz) stale bread, crust removed
  • grated nutmeg , to taste
  • 100 ml (3 1/2 0z) single cream

Directions:

  1. Pour chicken stock into a saucepan with the beer, onions and stale bread
  2. Season, cover and gently cook for 40 minutes
  3. Puree in a blender, add a little grated nutmeg and the single cream
  4. Check the seasoning and serve scalding hot!
