Ingredients:

  • 4 tbsp molasses
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 3/4 cups unbleached flour
  • 12 tsp salt
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1 cup medium chopped wanuts or pecans
  • 1/2 cup dried cranberries , or a cup of either
  • small bowl of cool water
  • small bowl sugar

Directions:

  1. Combine flour, baking soda, salt and spices in a bowl and set aside
  2. With an electric mixer cream the butter, sugar and molasses
  3. Add the egg and vanilla and mix well
  4. Add the flour mixture, mixing well
  5. Add nuts and berries mixing until incorporated
  6. At this point you may either cover the mixing bowl or wrap the dough in plastic wrap then refrigerate for at least 1/2 hour
  7. Remove dough from fridge and make into desired balls. I use different sizes of scoops depending on the size cookie I wish to make, 1-2 ounce.
  8. Dip the tops of the cookie into cool water then sugar
  9. Place on a lined with parchment paper or one that has been sprayed with pan coating
  10. Bake n a pre-heated 350 degree oven for 16 minutes
  11. Remove from oven and cool for 5 minutes then transfer to a wire cooling rack
  12. These cookies freeze well for months in a zip-loc bag
