Ingredients:

Directions:

  1. Preheat oven to 375. Lightly grease cookie sheets
  2. Peel banana and mash with fork to make 1/2 cup
  3. Place flour, baking powder and salt in a small bowl, set aside
  4. Beat butter, granulated sugar and brown sugar at medium speed until light and fluffy, scraping down bowl
  5. Beat in banana, egg and vanilla, scrape down bowl
  6. Add flour mixture, beat at low speed until well combined, scrape down bowl
  7. Stir in chips and nuts, if using.
  8. Dough will be soft.
  9. Drop by rounded teaspoonfuls 2 inches apart onto prepared cookie sheet
  10. Bake 9 - 11 minutes, until edges are golden brown.
  11. Let cookies cool on cookie sheet, 2 minutes
  12. Remove cookies to wire rack, cool completely
  13. Store tightly covered at room temperature.
  14. These cookies do not freeze well.
  15. Makes about 3 dozen.
