Ingredients:

Directions:

  1. Sauté potato in oil in large skillet for 10 minutes.
  2. Add onion, green pepper and garlic, sauté until tender.
  3. Add broccoli; cook and cover 5 minutes.
  4. Arrange mixture in an 11x7x1-inch baking dish.
  5. Combine eggs and next five ingredients; beat until blended.
  6. Pour over potato mixture.
  7. Sprinkle with Monterey Jack cheese.
  8. Bake uncovered 25 to 30 minutes or until set.
