Asian Cucumber Salad

Ingredients:

  • 1 tsp salt
  • 2 tbsp sugar
  • 1 tbsp sesame oil
  • 1 1/2 tsp garlic
  • 1 1/2 tsp ginger
  • 1 1/2 tsp sesame seeds
  • 1/2 tsp red pepper flakes (or to taste)
  • 2 large cucumbers

Directions:

  1. Peel and slice cucumbers very thin. Mix with salt and drain in colander for 1 hour.
  2. While cucumbers are draining, mix the dressing by combining next 7 ingredients, adding the red pepper flakes last to make sure you don't add too much. Refrigerate until ready to use.
  3. When the cucumbers are drained, lightly squeeze to get rid of excess liquid. Add to dressing, refrigerate until ready to eat.
