Apricot Orange Pie

Ingredients:

  • crust
  • 1-1/4 cups flour
  • 1/2 tsp salt
  • 1/2 tsp grated orange zest
  • 3 to 4 tbsp cold orange juice
  • filling
  • 1 package(3oz) apricot gelatin
  • 1/4 tsp salt
  • 1 package (3.4oz) vanilla instant pudding mix
  • 1 container(8oz) frozen whipped topping

Directions:

  1. Preheat oven to 400 degrees.
  2. For crust,combine flour,salt,and ornage zest in a bowl.
  3. Cut in the shortening with pastry tool until mixture resembles coarse meal.
  4. Sprinkle with orange juice,mix until a soft dough forms.
  5. Using a floured rolling pin ,roll out dough and place in a 9 pie plate,trim edge of dough,flute,prick bottom of crust.
  6. Bake 15 to 18 miuntes.
  7. For Filling:
  8. Drain Apricots,reserving syrup.
  9. Place reserved apricot syrup(about 3/4 Cup) in a small saucepan.
  10. Stirring constantly,add gelatin and cook over low medium heat about 8 minutes or until the gelatin dissolves.
  11. Transfer to a large bowl,cool to room temperture (about 30 minutes)
  12. Process drained apricots,orange extract,and the salt in a food processor until apricots are pureed.
  13. Add to gelatin mixture.
  14. In a small bowl,combine half and half and pudding mix,beat according to package directions.
  15. Add to fruit mixture,beat until smooth.
  16. Fold in thawed whipped topping.
  17. Spoon filling tnto crust.
  18. Cover and chill about 2 hours or until firm
  19. Serve chilled
