Apricot Bread Scrumptious!

Ingredients:

  • 2 cups sugar
  • 4 cups flour
  • 1/2 cup water
  • 2 eggs
  • 4 tbsp butter
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Directions:

  1. Plump apricots by soaking in warm water, drain and chop.
  2. Cream sugar, eggs, water and butter. Stir in orange juice.
  3. Combine flour, baking powder, soda and salt, add to cream mixture and stir to blend.
  4. Fold in apricots and pecans, mixing well.
  5. Pour batter into two 8 x 4 inch greased and floured loaf pans. Bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes and remove from pans. Makes 2 loaves. Delicious!
