Applesauce Irish Soda Bread

Ingredients:

  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup buttermilk
  • 1/2 cup applesauce
  • 1/2 cup raisins
  • 2 tbsp milk

Directions:

  1. Preheat oven to 375 and spray an 8 inch round pan with cooking spray.
  2. Combine flour, sugar, baking soda and salt in a large bowl.
  3. Combine buttermilk, applesauce and butter in a small bowl, then add to flour mixture.
  4. Stir until mixture forms a ball and turn out onto a floured surface.
  5. Knead raisins into dough and pat into a 7 inch round.
  6. Place in prepared pan and cut a 1/4 inch deep cross in the top of the dough with a sharp knife.
  7. Brush top of the dough with the milk.
  8. Bake for 35 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool 10 minutes in pan, then turn out and turn right side up.
  10. Cool completely and cut into 16 wedges.
