Apple Raisin Oatmeal Bars With Icing

Ingredients:

  • 2 eggs
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp salt
  • 2 cup flour
  • 3/4 cup milk
  • 1 cup raisins
  • 1/2 cup dried apple bits

Directions:

  1. Beat eggs, butter and sugar together
  2. Add applesauce, vanilla, cinnamon & nutmeg
  3. Mix flour, salt & baking powder together
  4. Alternating with milk begin adding flour mixture into batter (If you feel too runny add more flour (no more than 3/4 cup))
  5. Add raisin and apple bits
  6. Pour into greased 9 x 13 pan (Hint: I use sugar to coat my pans so you avoid the white bottom and make everything have a little crunch to)
  7. Bake at 350 for about 30 minutes or until knife inserted in middle comes out clean
  8. Remove and cool in pan on wire rack
  9. When COMPLETELY cool, spread icing of:
  10. Milk, Confectioners Sugar and Vanilla (Mix until spreadable but not runny)
  11. Cut into square and serve
