Ingredients:

  • 4 eggs
  • 1/2 cup flour
  • 1/2 cup skim milk
  • 1/2 tsp salt
  • 2 tbsp butter

Directions:

  1. Preheat oven to 425°.
  2. Beat eggs vigorously 30 seconds.
  3. Stir in flour, milk, mix to blend well but do not over mix.
  4. Divide butter into 6 muffin tins, place in oven until melted.
  5. Place 1 tsp brown sugar in each muffin tin
  6. Divide apple among muffins.
  7. Pour batter equally on top of apples.
  8. Bake for 10-15 minutes or until top is golden brown.
