Ingredients:

Directions:

  1. Preheat oven to 325.
  2. Butter and flour 9-inch square pan.
  3. Mix flour, brown sugar, sugar, 2 1/2 teaspoons cinnamon, salt and ginger in large bowl.
  4. Add oil and stir until mixture resembles coarse meal.
  5. Transfer 3/4 cup of mixture to small bowl.
  6. Stir remaining 1 1/2 teaspoons cinnamon into mixture in small bowl and reserve for topping.
  7. Mix baking soda and baking powder into flour mixture in large bowl.
  8. Add apples. Whisk buttermilk and egg in another small bowl to blend.
  9. Add to apple mixture and stir just until combined.
  10. Pour batter into prepared pan.
  11. Sprinkle reserved topping evenly over.
  12. Bake cake until tester inserted into center comes out clean, about 1 hour 20 minutes.
  13. Transfer to rack and cool slightly.
  14. Serve coffee cake warm or at room temperature.
