Ingredients:

  • 1/3 cup puritan oil
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ground ginger
  • topping
  • 2 tbsp. sugar
  • 2 tbsp. finely chopped walnuts
  • 1/2 tsp. cinnamon

Directions:

  1. Heat oven to 350`F.
  2. 2. FOR CAKE, combine oil and sugar in large bowl at medium speed of electric mixer.
  3. 3. Add eggs.
  4. 4. Beat well.
  5. 5. Combine next 6 ingredients.
  6. 6. Add to oil mixture.
  7. 7. Beat until just blended.
  8. 8. Stir in apples.
  9. 9. Spread evenly in ungreased 9 x 9 x 2-inch pan. FOR TOPPING, combine sugar, nuts, and cinnamon.
  10. 10. Sprinkle over batter.
  11. 11. Bake at 350`F for 25 to 30 minutes or until wooden pick inserted in center comes out clean.
  12. 12. Cut into 3 x 2-1/4-inch rectangles.
  13. 13. Serve warm or at room temperature.
