Ingredients:

Directions:

  1. Slice the aubergine, spread on a baking tray, brush with a little oil on both sides, and grill until brown, turning once
  2. Slice the onions, and sauteé in a small amount of oil
  3. Chop the garlic, sauteé in a saucepan using the remainder of the olive oil, add the tin of tomatoes, sugar and oregano
  4. Simmer for 10 minutes, allow to cool slightly.
  5. Break the eggs whisk roughly with a fork and add into the tomato mixture, stirring it through thoroughly
  6. Layer half the aubergine, then half the onion and cover with half the tomato and egg mixture. Cover with half the parmesan
  7. Layer on the rest of the aubergine, onion, then the sauce, cover with the remainder of the parmesan.
  8. Sprinkle with some black pepper on top and bake in the oven for 45 minutes to an hour
