Ancient Greek Fish With Coriander

Ingredients:

  • 1 tsp salt
  • 12 oz cod fish fillets
  • 1 tbsp olive oil

Directions:

  1. Preheat the oven to 375°F.
  2. Place the coriander seeds in a baking pan and bake them for 10 minutes. Let them cool for 5 minutes.
  3. Mash them with mortar & pestle together with the salt.
  4. In small bowl, whisk together olive oil and vinegar.
  5. Dredge cod fillets in oil mixture.
  6. Toss fillets with the coriander mixture and place them in a baking pan.
  7. Cover the pan and place it in the oven. Bake the fish for 20 – 25 minutes.
  8. Remove from the oven, sprinkle with vinegar and serve hot.
