Amazing Vegetarian Split Pea Soup

Ingredients:

  • 3 cloves garlic
  • 1 tbsp olive oil
  • 16 oz split peas
  • 1/4 tsp cumin
  • 1/2 tsp caraway seeds
  • 1 tsp basil
  • 1/2 tsp oregano
  • 1/4 tsp cayenne
  • 1/4 tsp bay leaves
  • 2 litre water

Directions:

  1. Saute the carrots (sliced), onions (diced), and garlic (minced) in olive oil until onions are translucent.
  2. Add split peas and 1 L water. Stir in all spices (careful with the cayenne- 1/4 tsp makes it rather spicy).
  3. Cook for 1 hour, 20 minutes. Add more water as needed for desired consistency. Add salt and pepper to taste.
